This is immensely quick to prepare. Really. I mean, they’re pancakes. So the quick preparation and comfort factor are guaranteed! But the usual sweetness is replaced by its good friend. The one that doesn’t necessarily make appearance on breakfast table that frequently, unless you are making an omelet. These pancakes are eggless and they are savory, prepared with onions and green chilies.
This flour mix can be prepared ahead of time. Rice, urad dal and chana dal constitute the main ingredients. Fenugreek seeds add a dash of flavor in this mix. Take 1 kg rice, 1/4 kg each of dal and 2 tablespoons fenugreek seeds, grind them together and your flour is ready!! Use of rice and dal, essentially no harmful gluten containing grain makes these pancakes completely gluten-free. And since there is no dairy or egg in the recipe, it’s vegan too! And to make the deal even better, what’s the best part? In an airtight container stored at a cool, dry place, the flour will last you up to 5-6 months.
Your Map to Amboli (Savory Pancakes)

- 2 cups amboli flour
- 1/2 small chopped onion
- 1-2 green chilies
- 1/2 teaspoon asafoetida
- 1/2 teaspoon turmeric powder
- salt to taste
- 2/3 cup water
- Add the asafoetida, turmeric powder, chilies and chopped onion to the flour. Add the salt. Add water and mix everything together to get thick pancake batter-like consistency. Adjust water amount if necessary.
- On a non-stick hot pan, spread the batter in a round shape. Keep heat at medium-high and cook covered for a minute or two. When the bottom turns brown, flip and cook covered another 2 minutes.
- Serve hot with ketchup or plain yogurt.
